Jane's Version of Ka Bebe's Menudo


Jane tasted my Mom’s Menudo for the first time in one of our visits to the Philippines. My mom, knowing that this dish is one of my favourites, prepared it for our homecoming. Jane liked it and has been in her list of special recipes to date.  She prepared this dish for our guest today alongside her Lumpiang Shanghai. As promised, this is the recipe:

INGREDIENTS:

1 kilo pork (cut into small chunks)
1/4 kilo pork liver (cut into small cubes)
2 medium-sized potatoes (peeled, cut in small cubes, fried)
1 green, red and yellow bell pepper (diced)
1/2 cup green peas
3 tomatoes (diced)
1 small head of garlic (minced)
1 medium size onion (diced)
hotdogs
1 can liver spread
salt and pepper to taste
Cooking oil

PROCEDURE:

Place the pork, pork liver, salt, pepper and a quarter of the onions in a casserole of water. Simmer for 20 minutes or until the pork is tender. Set aside.

In a pan or wok, heat cooking oil. Fry the potatoes and carrots and green peas. Set aside.

In the same pan, saute garlic, onion. Then add the pork, liver, tomatoes, bell pepper, patis and about half a cup of the stock. Cover and let it simmer. Then add the potatoes, carrots and green peas. Simmer for another 2 minutes. Add salt and pepper to taste.

Serve hot with white rice.
